• 1 cup unsalted margarine at room temperature
  • 1/2 cup granulated sugar
  • zest of one orange or tangerine (just the orange part, not the bitter white pith)
  • 1 heaping cup fresh cranberries chopped up
  • 2 cups GF Flour
  • 1 tsp pure vanilla extract

Steps:

  1. Cream the butter, sugar, and zest together
  2. Add flour and vanilla
  3. Add chopped/minced cranberries
  4. Form dough into log and chill in fridge for 3hrs or overnight
  5. Preheat 350F
  6. Slice the dough into 1/3in slices and place on the cookie sheet, two inches apart
  7. Bake for 10-12mins
  8. Rest on cookie sheet for 5-10mins
  9. Then rest on cooling racks for 10-15mins
