- 1 cup unsalted margarine at room temperature
- 1/2 cup granulated sugar
- zest of one orange or tangerine (just the orange part, not the bitter white pith)
- 1 heaping cup fresh cranberries chopped up
- 2 cups GF Flour
- 1 tsp pure vanilla extract
Steps:
- Cream the butter, sugar, and zest together
- Add flour and vanilla
- Add chopped/minced cranberries
- Form dough into log and chill in fridge for 3hrs or overnight
- Preheat 350F
- Slice the dough into 1/3in slices and place on the cookie sheet, two inches apart
- Bake for 10-12mins
- Rest on cookie sheet for 5-10mins
- Then rest on cooling racks for 10-15mins
