Pancakes

Dry:

  • 260g GF flour
    • 104g tapioca starch
    • 78g millet flour
    • 78g sorghum flour
  • 4tsp of baking powder
  • 2tsp of psyllium husk WHOLE or 1tsp of xanthum gum
  • 1/2tsp of salt
  • 4tsp of Sugar

Wet:

  • 1 can of coconut milk or 400g of milk/not-milk
  • 3-4tbsp of oil/melted butter
  • 1 unit(~115g) of apple sauce or 2 eggs
  • 2-4tsp of Vanilla

whisk dry ingredients till even

mix in wet ingredients and let sit for 5-10mins to thicken up.
